Daylesford Cider x Woowarra Pommeau (v.24)
Woowarra and Daylesford Cider combine complementary expertise to create a pommeau that celebrates orchard provenance and small-batch technique. Daylesford's organically tended heritage cider varieties are pressed and fermented into a layered cider that Woowarra distils to a refined apple eau de vie. The eau de vie fortifies freshly pressed new-season juice, and the blend is matured in a single family's private reserve of rare 1930s English oak casks — a near-century of oxidative memory that shapes this pommeau's most distinctive notes.
The pommeau is polished copper in the glass, with a bright gold rim. The nose offers orchard perfume — dried fruits and baked apple, quietly resinous. On the palate, honeyed sweetness meets toasted oak spice, caramelised stone fruit and a whisper of toffee, framed by gentle tannin and a clean, poised finish. The old tawny oak leaves its signature in a late note of fig and bitter orange rind, never at the expense of the fruit, which stays front and center throughout.
